tankless water heater, runs on (3) 40amp dual pole breakers, will upgrading to 200amp help it heat better?

i have 100amp now and when i turn on hot water it dims my house light and i have hit and miss hot water. the tank-less heater is a 3 bowl system.

First off, if you are running 3 double pole breakers at 40A each, that’s 120A, not 100A. Now, what the heater itself will take is a different story. If it’s rated for 100A at 240VAC, you are merely giving it the ability to pull more amps if it wants to without blowing breakers. Going to a larger heater is definitely an option if you aren’t happy with your current one. They make some very nice 200A models for people that have more money than God and an electrical service to match.
We are out of the realm of standard residential service and into commercial services. Do you already have an MCC with induction metering? 400A or more? Polyphasic? 440V? What is your service? These things are energy hogs when they are on and you need a beefy service to even think about getting one.
If you are on a standard 200A residential service, this will be the most expensive water heater in the history of man. What’s so wrong with a big ol’ tank heater?
